How to taste olive oil

Warm a little oil in a small cup, smell it, then sip enough to notice fruitiness, bitterness and pepperiness.

Cup the vessel in your palm, cover it briefly, then inhale. Look for fresh impressions such as cut grass, herbs, tomato leaf or ripe fruit.

Sip, draw in a little air and swallow. Notice bitterness on the tongue and any clean peppery feeling in the throat. Taste without bread first; dip afterwards.
