What are olive oil polyphenols?
Polyphenols are naturally occurring plant compounds found in extra virgin olive oil. They contribute to flavour and help protect the oil itself from oxidation.
Their amount varies with olive variety, harvest timing, growing conditions, milling and storage.
Bitterness and pepperiness can accompany polyphenol-rich oils, but taste alone cannot give you an exact measurement. Polyphenols are interesting components—not a reason for exaggerated medical promises.
